That is when I have turned to alternatives which have really given me a lot of good options. Healthy and vegan, this recipe is definitely for those of you who are not just trying to lose weight but also for those who want to incorporate more vegetables and fruits in their diet, and who want to have healthier eating habits, while not compromising on the taste buds. And when you have a friendly whipped cream dispenser ready, you can always add a fun twist to the drink by making it into foam, thereby not just giving the illusion of more, but also adding to the magic, which will make people taste it, just by the appearance.
You would need a young coconut, and what you should ideally do is remove the top of the coconut, and drain and reserve the coconut water and then scoop out the flesh of the coconut with the help of a spoon. The key here is to find a coconut which is not too young or too old. If it is too young, the flesh will not have a chance to form, and we will need that for our smoothie. Too old, and the flesh will be too hard and the water will not be enough. So choose wisely, and find yourself a coconut with that perfect balance between the two.
Measure 1.5 cup of coconut water, and add 1 cup of the coconut flesh into a magic bullet or a blender. Add about 1 cup of pineapple bits, either fresh or frozen, 2 tablespoons of agave nectar. You can also use stevia or other alternatives if you do not have this handy. Add a tablespoon of vanilla extract and a squeeze of lemon. Then, add a pinch of sea salt, which will really incorporate the flavors well. Close the lid and blend until the smoothie is done to the consistency you like. And you can serve this either as it is, or you can also blend it with some ice. Or, if you want to be really naughty, add a shot or two of rum to it, to really make this into an amazing cocktail.
